Halloween is Coming!
Halloween is not my favorite holiday but the older I get the more I enjoy people watching. It is interesting to me to see what some people walk out of their house looking like. This year My self and 3 other coaches are putting on a 5k to help support, raise awareness and money for our Special Olympics (area 6). This race is on Saturday the 30th. It has been a long time planning and soo fun! I pray that everything goes smoothly and that God gives us great weather! I am soo excited for this race to happen. Favorites
1. Favorite Flower
I like to receive any flower! They are all pretty to me but my favorite is.. TULIPS! I haven't gotten married so I can't pick a flower from that! :) Hopefully someday!
2. Favorite color combo
I have a lot of gray in my closet but if I was decorating a house I would most likely pick what I call "guava"
3. Favorite celebrity couple
Carrie Underwood and Mike Fisher. Just Because I do!

Anything written by sugarland- stuck like glue, all I want to do. I like every single one of thier songs!

Cross it off the bucket list :)
This past Saturday Leanne, Jordan and I ran the Fargo half marathon
13.1 miles! Something that I can now cross off my bucket list.
I have learned a lot through this experience.
Here is Leanne and I before the race! Smiling... after the race no so much. I thank God that she was with me every step of the way. I could not have done this with out her! She push and pulled me! I love you! Maybe someday we can run another one together! :)
Here we are holding hands, still in good spirits at mile 8. (In the middle of the race I got warm and took of the white sweater and gave it to Ryan, so I was running and unpinning and pinning my bib, Quite the experience) Even though our feet hurt and we did not know this but soon our legs were going to go numb and not want to run anymore. But it was still worth it!
WE DID IT!!!!!!! I could not have asked for a better finish! Maybe a better time.... but still soo worth it! If you would have asked me right after the race, Sunday or Monday if I would do it again I would have said NO. But now that I think about it I might do it again. Maybe next year we will do the Marathon 4 person relay!
Jordan has been my pusher through this experience as well! He would keep me accountable on my training. After I finished he greeted me with hugs and kisses (don't tell my dad) and a bouquet of Flowers! I could not ask for a better boyfriend :)
These are my Beautiful flowers! I sure do love getting flowers :)
Everyone received a medal just for finishing the race! The whole experience is very fun. Did not think I would say that but I did have a good time (besides the blood on my shoes, my legs cramping, being sore for 4-5 days, taking long runs for training).
On the back of the medal it has a verse that says:
"let us run with perseverance the race that is set before us" -Hebrews 12:1

Don't Give Up
Studying for finals and continuously reminding myself that with Gods help I can do it. I will succeed with him at my side.
Thank you to everyone who is praying for me. Especially my mom!
I am so thankful that the Lord has given me: the ability to do well in school, to work hard, to understand the information being presented, to live each day for him.
This past Sunday Jordan and I tried out a new church and really really liked it! We are excited to go back this Sunday!

Learning
Just want all of you to know that I am becoming quite the cook! I usually cook about 1 or 2 meals for Jordan and I per week. I have made my mistakes (like cooking the pizza dough when it was supposed to rise) but I have had mostly really good experiences. I just made my first pan of lasagna! And everyone really liked it. I never knew it was so much work! Jordan likes to joke around and rate my meals on appearance and taste. So far so good! Thanks to my mom for the skills she has given to me! I only hope to be like her someday! (in more than one way) :)
Another thing that I am learning is how to say no. I have a hard time saying no to people and that can be good and bad. I have A LOT on my plate right now. Between school, papers, tests, finals, studying, training for the half marathon (May 22nd), my job, keeping up with my family, roommates, boyfriend, church,
Special Olympics- I am doing 2 sports right now, volleyball (partnering-which I love and never played in high school but it is a lot of fun) and coaching track (head coach) Never thought it would be so much work, but it is what I love! Yesterday we did assessments/time trials, what an experience people running everywhere. So much chaos but we did everything that needed to be done and at the end of practice the area director pulled me aside and told me how great of a job I was doing and she was really excited for the season. Hearing that just made me feel really good because I know this is what I love and I love these people and they have such an impact on my life that I don't even realize it sometimes. But I know also I have an impact on theirs. It is hard for some people to understand why I put so much time into, so I encourage them to just volunteer or I bring people with me to practice or a game or a meet and then they understand. So if anyone wants to come help me or get involved let me know! It is a very eye opening life changing experience!
Yesterday I had an athlete tell me they loved me and gave me a huge hug :) How can that not make you smile?
This is what God wants me to do and I just ask for your prayers! I know with his help I will complete my junior semester and continue to work for him with his special people!

Life
While I was in Texas for spring break I had a lot of yummy food! I had a really good chop salad and was inspired to make one when I got home! So Jordan and I made a salad! We used our imaginations to pick out what we wanted on it. We picked out everything that we liked on a salad and thought would taste good! Then we used a light Italian! It was yummy! :)
Ingredients:
1 bag of salad
tomatoes
bacon
avocados
hard boiled eggs
green peppers
sunflower seeds (with out the shell)
feta cheese
cucumbers
Right before I went on spring break we had state for Special Olympics basketball! My team got 4th place but all that really mattered is that everyone had fun! That weekend I also learned that I was going to be the head track coach for the Special Olympics of Fargo! I am very excited about this! The athletes on the track team are very hard workers and I am excited to see what is in our future as a team at state!
For Christmas Jordan got me tickets to see John Mayer, because he knew that John Mayer is my favorite! And we had not even been dating that long. On April 8th Jordan and I went to see John at the Fargodome! We had a blast! We had really good seats! I am not a concert person but this was the best concert I have ever been too!! :)

Life is Simple
This past weekend I had special olympics state for handball! Instead of being a coach I was a partner. So I got to play with them! My team ended up getting 4th place! It didn't matter what place we got just that we got a ribbon or medal! It was such a fun time, the only downfall was that is was 4 1/2 to 5 hours away, in Bottineau, North Dakota. The perfect example of a small town.
The next we have is basketball and that starts tomorrow! I'm very excited for that to start! I will be coaching a more experienced Higher functioning team!!! Here is a picture of my handball team! :)
On Saturday night my boyfriend (Jordan) and I made this recipe! And it was delicious!!
I got it from taste of home.com!
Ingredients
- 3 tablespoons cornmeal
- 1 tablespoon cornstarch
- 1/2 teaspoon garlic salt
- 1/2 teaspoon ground cumin
- 1 egg
- 1 tablespoon water
- 2 boneless skinless chicken breast halves (4 ounces each)
- 4 teaspoons canola oil
- 1/2 cup shredded Monterey Jack cheese
- 6 slices ripe avocado
- 1/4 cup sour cream
- 2 tablespoons sliced green onion
Directions
- In a large resealable plastic bag, combine the cornmeal, cornstarch, garlic salt and cumin. In a shallow bowl, beat the egg and water. Flatten chicken to 1/4-in. thickness; dip into egg mixture, then place in the bag and shake to coat.
- In a large skillet, heat oil. Cook chicken for 4 minutes on each side or until chicken juices run clear. Top with cheese and avocado; cover and cook until cheese is melted. Garnish with sour cream and onion. Yield: 2 servings.
